Verdure Misto (Grilled Marinated Seasonal
Vegetables)
Serves 6
Ingredients:
3 yellow squash
3 zuccini
2 red bell peppers
2 yellow peppers
1 red onion
1 large eggplant
1 bunch asparagus
(Or any other vegetable that is in season or to your
liking)
1 bunch fresh parsley
1 bunch fresh basil
2 cups Olive oil
1 cup Balsamic vinegar
3 cloves chopped garlic
Method:
Pre-heat grill
Cut vegetables into quarters or slices, any way that you like or is easy to
grill. Chop parsley and basil fine. In a medium sized bowl mix together the
basil, parsley, garlic, olive oil and balsamic vinegar. Season with salt and
pepper to taste.
Marinate the vegetables in the mix and let sit for at least 30 minutes.
Before grilling make sure to drain most of the marinade of the vegetables so
you will not have flare ups on your grill, and the vegetables will be greasy.
Save extra marinade for later. Grill vegetables until desired doneness.
Arrange on platter and drizzle reserved marinade over.
Serve and enjoy!
