Millet Yam Cakes

Makes 6 servings

Ingredients:
1 ½ cups millet, cooked
1 large yam, baked
1 leek, sliced thin
½ cup onion, finely diced
1tablespoon olive oil
1 tablespoon tamari or shoyu

Method:
Preheat oven to 400’F. Heat a medium sauté pan over medium-high heat. Add olive oil, leeks and onions. Saute till caramelized. In a large mixing bowl, add the cooked millet, mashed yam, onion mixture and tamari. Taste and season accordingly.

Line a baking sheet with parchment paper. Using an 8-inch scoop, form the mixture into patties. Place on baking sheet and flatten slightly. Spray lightly with vegetable or olive oil. Bake for 20 minutes until golden brown.
