Cole Slaw
Ingredients:
1 head cabbage, very thinly sliced
2 carrots, shredded
1 sweet onion
¼ cup apple cider vinegar
¼ cup maple syrup
Salt and pepper
1 cup mayonnaise
Method:
In the bowl of a food processor, place the onion, cider
vinegar and maple syrup. Pulse until onion is pureed. Add to cabbage
and carrot and mix well. Add salt and pepper to taste. Set aside for
about an hour or until ready to serve, stirring periodically. When
ready to serve, drain, if necessary and add mayonnaise.
